Total Time: Servings: Yield:
35 mins 8 8 scones
Ingredients:
2 cups all-purpose flour
½ cup sugar
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon baking soda
8 tablespoons unsalted butter
frozen
½ cup raisins (or dried currants)
½ cup sour cream
1 large egg
1 teaspoon white sugar
Directions:
1. Preheat your oven to 400 degrees F (200 degrees C) and line a baking tray with parchment paper.
2. In a medium bowl, mix together the flour, 1/3 cup sugar, baking powder, salt, and baking soda.
3. Grate the frozen butter into the flour mixture using a box grater. Use your fingers to work the butter into the mixture until it looks like coarse crumbs.
4. Then, add the raisins.
5. In a small bowl, whisk together the sour cream and egg until well combined.
6. Stir the sour cream mixture into the flour mixture using a fork until large clumps of dough form.
7. Use your hands to shape the dough into a ball. Don't worry if it seems dry at first - it will come together as you work it.
8. Place the dough on a lightly floured surface and pat it into a 7- to 8-inch circle that's about 3/4-inch thick.
9. Sprinkle the remaining teaspoon of sugar on top.
10.Use a sharp knife to cut the dough into 8 equal triangles, then place them on the prepared baking tray, about 1 inch apart.
11. Bake the scones in the preheated oven for about 15 to 17 minutes, or until they turn golden brown.
12. Let them cool for 5 minutes, then serve them warm or at room temperature.
Want to try some different flavors? Here are a few variations you can experiment with:
******omit the raisins!!!******
1. Cranberry-Orange Scones: Add some grated orange zest, use dried cranberries
2. Lemon-Blueberry Scones: Add some grated lemon zest, use dried blueberries
3. Cherry-Almond Scones: Add a little almond extract, use dried cherries
***Scones can be kept in an airtight container at room temperature for up to two days or in fridge for up to a week. You can freeze them for up to three months. Just thaw them in the refrigerator overnight or at room temperature for a few hours when you're ready to enjoy them again.
